Catering Industry Guide

More and more people are now suffering from food allergies and intolerances. It is estimated that around 10% of the population on the island of Ireland suffer from a food hypersensitivity – that is a food allergy, food intolerance orcoeliac condition.

These can vary from mild to life-threatening and adversely affect the quality-of-life of those who suffer from them. Ironically eating out, which is now such an integral part of life, is also risky for people with a food hypersensitivity.

Caterers can help protect their food hypersensitive customers by actively managing food allergens and they are legally obliged to do so. They must also provide accurate information on the allergen content of their food for their customers.

This booklet sets out what people in the catering industry need to know about these conditions and how to serve customers who must avoid certain foods. It will help you to meet your legal obligations to serve safe food.
